THE BEST RESTAURANTS, aren't the prettiest ones

The best restaurants aren't the prettiest ones.
Now, I I maybe shooting myself in the foot by saying this, but in my opinion, the best restaurants are the restaurants that survive year after year.
They are the restaurants that turn a profit.
The only way to make this happen is through tight controlled operation. And one of the main factors that contributes to a well-oiled operative machine is your layout.
You cannot out-operate a bad layout.
Now, ask yourself, does your restaurant flex for different group sizes? Can staff see every table from where they're standing? Is your kitchen, bar, and staff areas connected for smooth flow between them? Is there enough space between tables so that staff and guests can move around efficiently?
Now, aesthetics matter. Don't get me wrong, but get the business model right first.
